This recipe is one of my childhood favorites. For years I have tried to make it the way my Mom made it for my siblings and I and I think I finally nailed it! I am super excited to share it with you all. I did use frozen fries, but traditionally this dish is served with homemade ones....;0)
-1 lb.of skirt steak cut into strips
-4 tbs. of vegetable oil
-6 tbs. of soy sauce
-1 tsp. of cumin
-Salt and pepper to taste
-2 vine ripe tomatoes sliced into wedges
-1 1/2 medium red onions sliced into wedges
-3 oz. of cognac (optional - or use beef broth instead)
-3 tbs. of rice vinegar
-2 seeded orange chili peppers or Peruvian chili pepper (aji Amarillo) julienned
-2 tbs. of chopped cilantro
-1 bag of frozen seasoned fries
Prepare frozen seasoned fries per package directions.
In a large skillet, heat the oil over high heat and cook the meat until just done. Add the soy sauce, cumin, then salt and pepper to taste. Add the onions, cognac and cook for about 3 minutes stirring constantly. Add the tomatoes and cook for about one minute. Add the chili, vinegar and cook for another 2 minutes. Soon add chopped cilantro at the end.
Serve with white rice and over french fries
